Take leftover spaghetti** and mix with about a handful of mozzarella cheese and whatever soft cheese you have on hand (I used cream cheese, but you can also use ricotta). Mush (yes, that's the official term) the mixture into a pie pan, top with a couple spoonfuls of leftover sauce and another handful of mozzarella. Cover with aluminum foil and bake at 350 for 20 minutes. Remove foil and bake another 10 minutes until bubbly and cheese is melted. Voila! A once leftover dish is now a brand new one that tastes just like lasagna!
