Jessica Seinfeld is my BFF

My brother-in-law gave me this book for Christmas last year and I have finally gotten around to cracking it open! Let me tell you- this book is a-maz-ing! I've already made a handful of recipes from it and my kids have scarfed down every single one!

Let me tell ya, William would not eat a veggie to save his life. He is such a meat-eater and because of this book, I have learned to incorporate veggie puree into his meat. Now, before you think it's completely nasty, you have got to try it for yourself!

The first idea I pulled from Jess (that's what I refer to her as because she is my BFF after all) was to use carrot puree in my meatloaf. I used my own recipe, as per usual, but just added 1/2 cup of the puree and it was yumm-o! Sean liked it even better than the original because it held it's shape (you know how meatloaf gets all shriveled looking) and was super most and not greasy. The best part? My kids got carrots in them and had NO IDEA!

The next dish I dove into was for scrambled eggs with cauliflower puree. Now, I love broccoli, but cauliflower has never grown on me. I am being completely honest when I say that no one would ever know the veggie was there. My kids sure didn't and I don't think they've had a bite of cauliflower in their entire life. That is, until I scrambled them up some eggs :)

Over the past week I've sneaked veggies into pancakes, mac and cheese, spaghetti, and tacos. I am beyond excited to be getting all these veggies into my kiddos without the bribing, fighting, and headaches.

Making the purees is super easy if you just set aside about an hour to crank them all out. After that, you're done and have them at your fingertips for whenever you need them. Seriously?! What a smart girl- no wonder she's my BFF.
